This isn’t one of my typical blog posts with a list of ingredients and instructions…I had a rough weekend tummy-wise so all my amazing ideas quickly became meal dates with crackers and water. However, by the time I was feeling better, I was still feeling tired and needed to start slow. So, instead of making a big meal, I decided to create a simple grazing meal (which is a preferred way to eat anyhow). I’m sure all of you are familiar with this state of being…
I was lucky enough to pick up some items from the Jacksonville Fresh market on Saturday morning in anticipation of spending the day with friends in St. Augustine. But unfortunately I couldn’t make it…so on the next day, by the time I was hungry and felt good enough to “cook”, all I could think about was the charcuterie plate I was going to make for the Saturday get together.
The great thing about charcuterie is that you can basically pile on whatever appeals to you and whatever you have available. (There was no way I was going to the store to plan a full meal) Again, lucky I picked up stuff the day before…I originally intended to include some vegan cheeses, some deli meats and a couple veggies, but I went with what I had and what I thought I could handle.
So – here’s what I put together:
It was amazing!
Two kinds of Apples from Jacksonville Fresh, Avocado from the Jacksonville Fresh Box this week, Blueberries from Trader Joe’s, Baguette made into Crostini from French Pantry, Banana Rum Lime Jam from Little Black Box Baked Goods and 3 different cheeses from Sweet Grass Dairy (all insanely good – some of the best cheeses I’ve ever had in MY LIFE)!!!
This meal was a great reset, and it helped me end my weekend feeling strong. I guess what I mean to share here is that no matter what state you find yourself in – tummy troubles, stressed out, exhausted or just uninspired, you can grab what seems to be simple ingredients, slice them pretty and create something appealing to the eye and the belly.
With all the great vendors and options available from Jacksonville Fresh, the combinations are endless, creative and healthy…
